World Renowned Hospitality School at UNLV Offers Plant Power Course

Big News! One of the world's most renowned hospitality schools that teaches management of hotels and restaurants is offering a course on the plant-based diet and veganism. The University of Nevada at Las Vegas' William F. Harrah College of Hospitality

is offering a class on Plant Power. Mark Sandoval, Executive Head Chef at UNLV's Harrah's College of Hospitality has invited four local plant-based and vegan educators to teach the course: Jodi Paige, of VirginCheese.com, Sari Dennis of MyWellnessCounts, Heidi Roy of AlternativeJunkiie, and Daryl Elliott of HowToStartVegan.com, will be the presenters.

This course will be the starting place for Harrah's College of Hospitality to include a plant-based diet into their regular curriculum. This program will offer classroom PowerPoint presentations as well as food demos.

Mark Sandoval, Executive Head Chef at Harrah's School of Hospitality stated: "The interest stems from my desire to make our program as sustainable as possible- recycling everything we possibly can here on campus, utilizing products that are compostable, and purchasing ingredients as locally as we can. That being said, a plant based diet has very few effects on the environment vs. the effects of raising animals for consumption on our environment. Looking at the benefits of a plant-based diet in terms of health and wellness makes perfect sense. Educating our students to take care of our planet and to take better care of their health is something that can last them a lifetime."

The two classes, which will be taught on April 15th and 22nd, will cover a range of topics on the plant-based diet and veganism.

Heidi Roy, Alternative Junkie, Vegan lifestyle influencer, commented: "The best thing about thriving plant based is knowing my lifestyle is a “win-win”; no living species has to lose their lives in order for me to be sustained nutritionally."

Daryl Elliott, a 40-year vegan activist of VeganVids.com, HowToStartVegan.com, NonviolentActivism.com, and VegasVeganRestaurants.com, who founded a Las Vegas vegan meetup group with over 4,000 members, said: "It's great to see universities adding courses on the plant-based diet, and including the ethical and environmental aspects of veganism."
