Many people are struggling with weight gain during this pandemic, even vegans. Linda is a cooking instructor at Portland Community College and Mt. Hood Community College. She will discuss her own unexpected weight increase during 2020 and what she’s put into place to lose those pounds. She will draw on the book How Not to Diet by Dr. Michael Gregor as well as recommendations from Chef AJ. Each person has to design a weight loss approach that works for him or her. By harnessing the natural advantages of plant-based food for weight loss, vegans and plant-based eaters have an opportunity to lose weight while still filling up their plates and feeling full.
