I'm excited to announce EAT VEGAN: A collaborative popup that brings restaurants together for a one-of-a-kind vegan menu! Many of us miss the food festival experience, where you can nibble your way through dishes from multiple restaurants in one space -- that's what we wanted to create with this project. This first popup features a few Portland restaurants representing Asian dishes and flavors. It's an honor to work with this creative group to bring this idea to life, and I hope this can grow into an ongoing vegan event series to highlight different cuisines and themes.

Mitate - Meadow Roll
Artichoke hearts, cauliflower, apple, and cucumber, topped with avocado, fried shallots, micro greens, and chimichurri.
Mama Dut Foods - Mango Papaya Salad
Shredded mango, papaya, carrots, and tomatoes muddled in fermented soy bean, garlic, chili, and lime sauce. Topped with fried shallots and herbs. Served with black sesame and rice cracker.
Kati - Ube Croquettes
Served with smoked pineapple curry sauce, Chinese spiced jasmine rice, and pickled Persian cucumbers.
Kulfi - Trio of Pops
Jackfruit lime coconut, mango Thai chili, and lychee rose water. PS. Try the pops in cocktails!
Kumare - Ube Ensaymada + Biko
Sweet pillowy pastry with ube buttercream and cake crumbles, filled with ube halaya. Filipino rice cake made from sticky rice cooked with coconut milk and brown sugar, topped with caramelized coconut milk.
