All the vegetarian entrées are vegan when you hold the cheese and sour cream and ask them not to use butter. Unlike many other Mexican restaurants, Pancho's uses no chicken stock in the rice and no lard in the beans, so this is an excellent spot for a vegan meetup!

Veganizable entrées include:
Mushroom Burrito Supreme
Spinach Burrito
Bean Burrito
Veggie Burrito filled with Fresh Vegetables
Arroz con Vegetables (Rice with Onions, Broccoli, Celery, Zucchini, Carrots, and Mushrooms)
Vegetarian Fajitas (A Mix of Broccoli, Squash, Bell Peppers, Onions, Mushrooms, and Tomatoes with Rice, Beans, a Salad, and Tortillas)

Their guacamole is excellent and can be ordered as an appetizer.
